This variety of olive has its skin split open to allow a marinade of oils, vinegars, herbs, and spices to penetrate the olive faster. Cracked green olives have an earthy taste and are deliciously chewy. Serve them as an Hors d'oeurve along with a crisp, semi-dry white wine.
